Snazzy prawn, grapefruit and avocado salad

Hidden among the greens, this salad rehydrates and recharges your body with its high levels of water, mono-saturated fat, HDL cholesterol and vitamin C. Regardless of the health benefits, the tart bursts from the grapefruit, crisp crunch from salad greens, and natural creaminess of avocados plus the delicious prawns will delight your taste buds.

Ingredients

  • 3 tablespoon Asian fish sauce
  • 3 tablespoon fresh lime juice
  • 2 tablespoon sugar
  • 2 tablespoon avocado (or olive) oil
  • 30 large prawns, cooked, peeled and deveined
  • 2 large pink grapefruit, segmented
  • 3 red radishes, thinly sliced
  • 2 avocadoes, peeled, pitted and cut into chunks or slices
  • 3 scallions, thinly sliced
  • 175 grams baby salad greens
  • Bunch of watercress, thick stems discarded
  • 6 sprigs of mint leaves, stems discarded and leaves torn

Method

  1. To make the dressing – combine Asian fish sauce, fresh lime juice, sugar, and oil together in a jar, shake until blended
  2. Pat the prawns dry, add 2 tablespoons of the dressing and toss
  3. Toss the grapefruit, radishes, avocadoes, scallions, greens, watercress, and mint leaves in large bowl
  4. Divide among six dinner plates, arrange five prawns on top of each and drizzle remaining dressing
